Sauvignon Blanc Noble Late Harvest 2017 (375ml)
Beautiful citrine gold in the glass with rich aromas of ripe yellow-fleshed peaches and spiced apricots, our De Grendel Sauvignon Blanc Late Harvest has a soft palate of fruit, fynbos and honey with flavours of golden sultanas.
We make it by leaving specially selected Sauvignon Blanc grapes to hang on the vines and become naturally infected with Botrytis Cinerea, the fungus responsible for noble rot. The fungus penetrates the skin of the berry and utilizes the water, resulting in a concentration of sugars and flavour. 8 weeks after harvesting our Sauvignon Blanc for our dry wine, we finally bring the much-shrunken grapes into the cellar.
There we ferment the juice only up to 9.5 vol% alc, leaving 180 grams of sugar in the wine and making it extremely sweet.
