Bright straw yellow in colour, with extremely fine streams of bubbles that carry wafts of biscuity richness to the nose, nuanced by fresh citrus aromas with hints of grapefruit peel, before the palate is filled with a delightfully vigorous ‘mousse’ – the explosion of bubbles that gives way to fresh lemon and lime flavours balanced by a lemon-cream richness that ends long and flavourful, with a mineral green apple crispness.

  • Tasting Notes

    Pale lemon colour with exceptionally fine mousse. It exudes freshness and pure fruit on the nose by showcasing vibrant notes of Granny Smith apple, white blossom, candied lemon rind and white peach. Creamy, biscuit notes give texture to the lively citrus and green apple. An elegant and refined MCC with a yeasty undercurrent on the palate.

  • Food Complements

    This Cap Classique is the ideal drink for all occasions and is the most versatile wine for food pairings. Enjoy it as an aperitif before dinner, with creamy Mascarpone scrambled eggs, smoked salmon and cream cheese canapé or a warm baked apple tarte tatin.

  • Vintage

    The season presented a cold winter and a cold spring with good rainfall and a very moderate growing period during summer. This resulted in a later-than-usual harvest and grapes were harvested 14 days later compared to 2020.
