Prep time: 10 mins / Cook time: 15 to 20 mins / Makes 8 to 10 twists
Ingredients:
400g readymade puff pastry, defrosted
125g cream cheese or goat’s cheese
100ml onion marmalade or soft caramelised onions
250g grated sharp Cheddar cheese
5ml fresh thyme leaves
5ml black pepper
1 egg, beaten
Method:
Preheat the oven to 200°C. Lightly flour a lined baking sheet and lay the pastry flat on it. Spread half the pastry with the cream or goat’s cheese and spoon over the onion marmalade.
Sprinkle over three quarters of the grated Cheddar and top with the thyme and black pepper. Fold the pastry in half and use a sharp knife to slice it into strips. Twist each strip in a corkscrew motion and brush each piece liberally with egg wash.
Scatter over the remaining grated Cheddar and bake for 15 to 20 minutes or until golden and melty. Serve warm or at room temperature, and enjoy with a glass of De Grendel Cap Classique Brut.
