Cap Classique Brut 2022

R 265.00

Effervescent elegance in a glass – our beautifully balanced Cap Classique, the winner of multiple trophies and awards through the years.

Sometimes, a celebration is just for two – you and the bottle – for all other special occasions, sharing is essential as long as the Cap Classique is ice cold and the company invaluable.

Bright straw yellow in colour, with extremely fine streams of bubbles that carry wafts of biscuity richness to the nose, nuanced by fresh citrus aromas with hints of grapefruit peel, before the palate is filled with a delightfully vigorous ‘mousse’ – the explosion of bubbles that gives way to fresh lemon and lime flavours balanced by a lemon-cream richness that ends long and flavourful, with a mineral green apple crispness.

Pale lemon colour with exceptionally fine mousse. It exudes freshness and pure fruit on the nose by showcasing vibrant notes of Granny Smith apple, white blossom, candied lemon rind and white peach. Creamy, biscuit notes give texture to the lively citrus and green apple. An elegant and refined MCC with a yeasty undercurrent on the palate.

This Méthode Cap Classique is the ideal drink for all occasions and is the most versatile wine for food pairings. Enjoy it as an aperitif before dinner, with creamy Mascarpone-scrambled eggs, smoked salmon and cream cheese canapés or a warm baked apple tarte tatin.
During 2021, a late winter and spring lead to a late harvesr season in 2022 with 3 small compact heat waves in January. Above average crop, quality and quantity wise.
The De Grendel Cap Classique is a classic blend of 81% Chardonnay and 19% Pinot Noir. Grape bunches were whole-bunch pressed. After settling and racking, the juice was inoculated and fermented in stainless steel tanks where it underwent malolactic fermentation. The base wine was filtered and bottled with ‘Liqueur de Tirage’, a yeast and sugar mixture which facilitates secondary fermentation in the bottle creating natural carbonation. The wine was aged on the yeast in the bottle for 14 months to create that delicious biscuit-like richness before ‘dégorgement’ – the process whereby the yeast is removed to leave the wine beautifully clear.
