Ingredients:
- Mini meringues (store-bought or homemade)
- 250g cream cheese, softened
- 60-80g icing sugar
- 2 tbsp lemon juice
- ½ tsp almond or mint essence (optional)
- ¼ cup fresh berries
- 2 tbsp grated white chocolate
- 6 small candy canes
- Handful of fresh mint leaves
Method:
-
Prepare the Frosting: In a medium bowl, mix the cream cheese, icing sugar, lemon juice, and essence (if using) until smooth. Transfer the frosting to a piping bag fitted with a small round tip for easier assembly.
-
Assemble the Wreath: Pipe a small dollop of frosting onto one side of a mini meringue. Press it gently against another meringue to stick them together. Repeat until you form a circular wreath shape. Use additional frosting to fill any gaps for a seamless look.
-
Decorate: Top the wreath with grated white chocolate, fresh berries, candy canes, and sprigs of mint for a festive finish.
-
Serve and enjoy with a cold glass of De Grendel Proposal Hill Brut Rose.
*Optional Variation: Swap the cream cheese frosting for caramel treat and use chopped peppermint crisp in place of white chocolate for a rich chocolate-caramel version.
