Hot Smoked Salmon Salad with Citrus, Ricotta and Vanilla Dressing

Chef Ian Bergh conjured up this delicious yet simple salad recipe which is ideal to enjoy over the warmer summer months. We love that the smoked salmon and citrus elements work so well with bubbly, and our Proposal Hill Brut Rosé is a great match for this salad. Ingredients
- 100g hot smoked salmon, flaked
- 3 tbsp ricotta, crumbled
- 3 orange segments
- 3 lime segments
- 3 grapefruit segments
- 1 tbsp sliced spring onion
- 1 tsp chopped chives
- 1 cup mixed baby leaf salad
For the dressing
- 1/3 cup extra virgin olive oil
- 3 tbsp white wine vinegar
- ½ tsp Dijon mustard
- Seeds from 1 vanilla pod
- ½ tsp Malden salt
- ½ tsp brown sugar
- ¼ tsp cracked black pepper
Method
Combine all the ingredients for the dressing, whisk together until emulsified, set aside
Now arrange all the ingredients for the salad on a serving plate, drizzle over 2 tablespoons of the dressing, garnish with micro herbs, season, and serve immediately with De Grendel Proposal Hill Brut Rosé.
